Recipes

PACIFIC RIM PASTA SAUCE

16oz. CVG Mango Lime Salsa
1 can Crushed Tomato
16-24oz. Heavy Cream

1-2 lbs. Chicken, Shrimp, Fish or Vegetables
2T Olive Oil


Saute meats and/or vegetables in olive oil and set aside. In a large bowl, mix
the rest of the ingredients. Add cream mixture to meat and/or vegetable
sauté and heat to just shy of boiling point. Do not allow to boil. Turn on
low and let simmer for 10 minutes. Serve over pasta.






 


Pork Chops with Hot Peach & Apple BBQ Sauce

A unique mixture of Hot Peach & Apple Chutney, ketchup, brown sugar, bourbon, chicken stock and cilantro really brings out the flavor of these pork chops.

Ingredients

  • 4-6 Pork chops, boneless
  • Olive oil
  • Salt and pepper to taste
  • 1 Tbsp. Olive oil
  • 1/2 cup Onion, diced
  • 3/4 cup Robert Rothschild Hot Peach & Apple Chutney
  • 3/4 cup Ketchup
  • 1/4 cup Brown sugar
  • 1/4 cup Bourbon
  • 1/2 cup Chicken stock
  • 1 tsp. Cilantro, minced
  • Salt and pepper to taste
  • Directions
    1. Brush pork chops lightly with olive oil and season with salt and pepper. Grill pork chops for 3-4 minutes per side and then finish in a 375 degrees F oven for 15-20 minutes.
    2. Meanwhile, heat 1 tablespoon olive oil in a medium saucepan. Add diced onion and cook until slightly translucent. Mix in the Hot Peach & Apple Chutney, ketchup, brown sugar, bourbon, chicken stock and cilantro. Simmer sauce for 20-25 minutes and then season with salt and pepper.
    3. Serve pork chops with BBQ sauce spooned over top alongside your favorite grilled vegetables.
